Adventurous Garlic Breakfast this AM
Recipe:
2 egg omelette with chopped fresh arugula and a handful of crumbled potato chips added before cooking, then cooked over low heat (how much longer can it take ?) After omelette is flipped (no folding in this one) parmesan cheese melted on top. On the center of the destination plate, smear about one tablespoon of lowfat cream cheese and - here's the adventurous part- using a garlic press add one large fresh clove and stir well into the cream cheese and try to spread it out a little on the plate. I would normally add some cubed avocado to the cream cheese and garlic though not ripe yet this time. Put the omelette right on top of this.
A layer of finely cut shrimp with a bruschetta (prepared here- I've never tried to make my own) tops it off nicely. Bon appetit !
